The story behind Meraki

A simple beginning.
A not-so-simple
way of doing food.

Meraki is the culinary world of Chef Simmone Edwin—built on Caribbean flavour, professional craft and the belief that food should give people something worth talking about.

Where it began
“Yuh should sell this yunno!”

Five words from friends helped turn a love of cooking and entertaining into Meraki Catering.

Food was always
more than the meal.

Meraki began with Chef Simmone cooking for friends, sharing stories and imagining food experiences that could feel both accessible and exceptional. What started with desserts and simple meals grew into a catering and hospitality brand serving clients across Trinidad.

The name captures the heart of the business: leaving a piece of yourself in what you create. That idea still shapes every menu, every table and every guest experience.

Chef Simmone Edwin

Traditional at the core.
Unapologetically creative.

Chef Simmone is grounded in classical culinary technique, but she is never afraid to challenge how familiar food is prepared, presented or experienced. Local flavour, culture and a touch of fun sit at the centre of her approach.

Her work moves comfortably between private dining, large events, desserts, culinary education, food styling and consulting—always with the same attention to flavour and hospitality.

Professional care

Planning, timing and presentation receive the same attention as the food.
